Healthy Meal Ideas Week of 1/17/18

One of my goals for this blog is to come up with meal ideas for the week focusing on ingredients that are on sale that week.

WEDNESDAY

Chuck Roast with Balsamic and Dijon

by The Wicked Noodle

Ingredients on sale this week
Chuck roast – $4.99/lb at Sprouts
Baby carrots – $.99/lb at Sprouts
Organic russet potatoes – $2.5/3lb at Kroger
Yellow onion – $1/3lb at Sprouts (I always throw in some onion to my pot roast to add to the flavor)

I love pot roast because they are so easy and don’t take a lot of prep, perfect for a cold day!  They also make delicious leftovers that we can eat on for lunch the rest of the week.

THURSDAY

Clean Eating Slow Cooker Baby Back Ribs

By The Gracious Pantry

Ingredients on sale this week:
All natural pork baby back ribs – $2.99/lb at Sprouts

These ribs are great for weeks like this week when it is too cold to grill outside but want some of the flavors of summer!

FRIDAY

Garlic and Herb Pork Roast

By Girl and the Kitchen

Ingredients on sale this week:
Pork roast – $2.5/lb at Kroger
Baby carrots – $.99/lb at Sprouts, $1.99/2lb at Kroger
I like throwing in a bag of baby carrots to add some veggies to the dish.  The carrots taste delicious in the sauce when roasted!

SATURDAY

The Easiest, Juiciest Steak Ever

By Yellow Bliss Road

Side ideas:
Mashed potatoes
Roasted zucchini and yellow squash

Ingredients on sale:
New York Strip Steak – $5.99/lb at Kroger
Organic russet potatoes – $2.5/3lb at Kroger
Zucchini and yellow squash – $.98/lb at Sprouts

SUNDAY

Slow Cooker Cuban Pork

By bellyfull.net

Ingredients on sale this week:
Boston butt bone-in – $.99/lb at Kroger

Could easily pair this with some brown rice, salad, over a baked potato… there are so many options!

MONDAY

Easy Oven Fajitas

By Budgetbytes.com

Ingredients on sale this week:
Boneless, skinless, chicken breasts – $1.77/lb at Sprouts
Bell peppers, red, orange, yellow – $.98/each at Sprouts
Yellow onion – $1/3lb at Sprouts

TUESDAY

Mustard Balsamic Pork Chops

by Jo Cooks

Side idea:
Rosemary and Garlic Maple Glazed Carrots – my favorite way to make baby carrots!  I make these every time with the mustard balsamic pork chops.

Ingredients on sale this week:
Boneless pork loin – $2.5/lb at Kroger (They will cut this into whatever thickness pork chop you want for free!)

Stock-up Prices!
Sprouts –
Chicken breast – $1.77
Organic gala apples – $.98/lb

Not a ton of variety this week, very pork heavy.  Realistically I would save one or two of the pork recipes for next week, buying the meat on Tuesday if possible.
